K2 Category Creation Error

This is now the 3rd issue I've had in two hours since I downloaded Corporate 2 quickstart:

Fatal error: Call to undefined function mb_internal_encoding() in /home/firstcla/public_html/administrator/components/com_k2/tables/k2category.php on line 49

Now it appears to be a server issue.
