advice on customising k2 layout

I'd like to change how k2 (and k2mart) display products in the category listing. I've created my own template for k2mart, based off of it's "template4.php" and have been tweaking that. This is workign quite nicely
however for k2 itself, I'm not quite sure what the recommended way of customising is. For example, I'd like the item image to appear *above* the item title. Now I can obviously edit
gk_boutique_quickstart/templates/gk_boutique/html/com_k2/templates/default/category_item.php
however I'd rather keep the boutique files in tact... is there some better way to customise the layout of k2 templates?

unfortunetly no. It is best way to override file in html folder.

Actually; i just figured out k2's "sub templating"... that's exactly what I was after... create a copy of the default template; rename it, use it; and still keep the original and default in tact... for more info:
