Remove color selector, and default to blue

Let me first say that I really like the templates, and appreciate all the work that you've put into them.
Second - I'm a Joomla newbie, but not a newbie to CMS (DotNetNuke, OsCommerce, etc.) so I'm not a total lost case.

So here's my question - I like the default blue color selection, and would like to have the template always be that color a not be adjustable. I'm sure that I can just remove the selector circles, but where do I go to define the default color scheme?

Never mind - found those selectors in the Template Manager area.
