Changing fonts in the Menu

I am new to using your templates and I noticed in the forums that people need to put in specials codes in the header-selector area, under template manager to change the fonts, like

h1,
h2,
h3

I tried searching the help files but is there a document which I can study so I can change the fonts of my menu myself, or can only a moderator tell me the code and I just paste it in?

Because when I download a template the fonts are never how they appear in the demo and I have no idea how to change this.
