Is it possible to override the template's default bullet styling for certain areas of the template?
Basically just use regular bullets with having to add the bullet class?

As you know, if you add bullet content, the bullets wont show unless you use the Gavick bullet class.

The Problem: I've added a job board to my client's site. He wants to post jobs by copying and pasting content directly from his word document without having to style anything. i.e. bullets.

Is this possible?

Try update your template to the latest version. List should be styled. Without using gavick typo.

What is the easiest/safest way to update a template?
If I update the template, will it override the custom styling I created?

Is there a simple CSS override without having to update the whole template?

Please try override typography.style1.css,typography.style2.css,...,typography.style6.css and if you didn't edit joomla.css override it too. If you do changes please try use some tool like WinMerge to merge your joomla.css and our joomla.css file.
