On some pages I don't want the white menu, which is automatically showing up on pages with big header like single item pages, category blog pages or user pages, because of the "dark-bg"-suffix.

How can I change the white menu to dark menu?

Hi

Now I see what You mean. Please simply remove page class suffix "dark-bg" in template settings from this pages ID's.

But my real problem is to change the home page (frontpage) menu to white.

Dude is easy!!

Check my page:http://www.flatcodes.com

Go to Template settings > Features > Scroll Down to Suffix > Delete Suffix Front page and Add a new Suffix:

Frontapage Dark-Bag

And that's it
