Yes, you are using post-listing.format, so the default "Format" field doesn't work (it works only if you select Article format:"none".)

Is it possible some how to change author tag to category tag in post-listing.format?

Yes, but only by editing plugins file:
plugins/gk-nsp/article_formats/post-listing.format

and change

to:
