sure even I did it many many times,
those extensions are like software in your pc/mac you can just uninstall and be free.
Of course, do not forget about some module settings, they may use those data, but all can be disabled as well.
In most cases you do not need even K2.

VirteMart and Hikashop or even K2 are not plugins, there are more than that. Components, but yes in package there were also plugins for them, just uninstall if you do not need.
