In my website: http://www.agendaenogastronomica.it/index.php
I try to change the logo_dark.svg
I open Adobe Illustrator save the file as logo_dark.png and cargo, but not visible.

I checked the file logo_Dark.svg of your template, I saw that the generated code does not include the item image that generates the illustrator, a code very long.

I tried to save it with this settings
SVG 1.2 vats
SVG
ingelese Standard
Decimal figures 3
UTF-8

How do I fix?

I had already read that post.
I also downloaded the trial version of Adobe Illustrator cc

But the logo is uploaded regularly, it is visible, but not visible in the session menu.

This is really weird... Your svg files is not a "path" type fie but image type file (probably you have imported png file and saved is as a svg file which makes it useless. If you don't have a vector type of your logo, then do not use svg at all and stick to png logo type.

Sorry, but we don't "modify" logos for our clients, you need to prepare correct svg file (using curved logo type in vector type editing software like Illustrator CC).
