Good morning,
I am looking to replicate the users ability to sort/display K2 content by category as in the 'John template' https://demo.gavick.com/joomla25/john/ by selecting a button named by a category.
I have tried to use News Display Portal option from your documentation but can't find how to activate that feature.
    Is it specific to the John template only?

Hi

Yes it's possible. This module style is called "Portfolio II". Make sure to enable using modules default css in it's advanced settings.
