I would like to be able to use an override functionality (for instance override.css) in order to change some K2 styling. Is this possible?

Hi,
Sure and in most cases in the best solution, because if you will upgrade K2 you won't lost changes.
But sometimes you've to use !important at the end of css tags - to make sure it would override style.

For more tips check our documentation section.
