Please how can I change the template folder name (gk_news2) to a custom one? I want the name to be "myjcr".

Thank you but I had read that documentation that uses a new GK template package before seeking for support. The site I want to rename its template folder is live/online already.

I understood the instruction that I rename all folder names in the templateDetails.xml file. But I don't understand the 4th step (Rename the language file according to new name, for example, gk_new\language\en-GB.tpl_gk_new.ini). There is no "language" folder in the gk template folder where I can locate and rename the language file to "en-GB.tpl_gk_new.ini".

Lastly how will I repack the template that is already live and install? Thank you once again.

I would strongly suggest to back up everything in first place.
You can modify files live on your server (via ftp client), but if it were me - I would create zip package on my local machine, change template to Beeze, remove original news2 template from the server and upload new, custom prepared one.
The language file after installation can be found in:
SITE_ROOT/language/en-GB/en-GB.tpl_gk_news2.ini
