I am trying to locate which Css or PHP file(s) to edit to change the wording as highlighted in the pic. Is there one master file?

Hi,
you don't have to touch PHP nor CSS, Joomla is CMS so all content are generally inside articles or modules.

In Module Manager find module named "Header" on position: header, this is Custom HTML module anyway. ;)

I am using Acymailing, but do know how to configured it to work within simplicity function clicked (Get started Today). How to do it?

Insert newsletter module inside article, instead of the demo form , then add some style/class to module in module.

There are few methods :
1) Joomla 3.x have feature (plugin) called "Content - Load Modules"
Within content loads Module positions, Syntax: {loadposition user1} or Modules by name, Syntax: {loadmodule mod_login}. Optionally can specify module style and for loadmodule a specific module title.
