Hi.

How do you insert a button into a custom html module that's like the 'read more' buttons in articles but that go to either a menu item or a URL please?

I don't think it is possible without modifying Joomla! layout. Please look at /html/com_content in template directory where you will find view for article, category etc. Then you just need to add part of HTML to proper place.
