Have a customer pay for a workshop using the style of the page. Virtue mart in this template looks terrible and unprofessional because it isn't a store template but I need to sell workshop entries. Any advice?

The price table is just a html piece of code. You can attach any action for buttons in it, so if you know how to connect with paypal API, it should be not a problem.

Won't I need a store front to offer a product. If I link this to paypal will it be in donation form? I'll look into this. If this was a functional page, how would it be implemented?

I'm not a paypal specialist but if you can generate a link that allows to pay fixed amount and then just attach it to a button - then it will work fine. Otherwise it will not be possible without some ecommerce solution that would work as a destination to point to inside the table.
