How do I go about changing the labels in the contact form?

but which labels, because labels are from language file, check it out :
language\en-GB\en-GB.tpl_gk_the_real_design.ini (on the bottom/middle of file)

You have to make a clone, set UTF-8 to your editor and translate some strings, save, and upload to your server.
