Is there any way we may set in Copyrights field of template settings something like "&copy 2009-&year" so that it would show "© 2009-2015" this year and change to "© 2009-2016" next year automatically?

In theory yes, but you have to edit template default.php file , adding whole copyright line with short php to show current year

Besides.... copyright is only in US law, in EU we do not have to use it.

Ok, I was asking about the way to do so from the template's back-end, not from inside the code. And from your answer read it to mean "no", right?

In custom fields you can use html tags only.
