Are You sure the font You are using is supporting umlauts ? Maby this should be resolved by using cufons.

What template are You using? Does it support cufons, if Yes than You will probably find this option on the template parameters. Than You need to create the missing letters (the link to the cufon generator should be next to this option). Copy the fonts to the site, enable it in template and choosing to show for places where this problem occurs.
